Change Default Search Engine in Safari on iPhone, iPad or iPod Touch

The number of default search engine choices in mobile Safari on your iOS devices has been increased to three since iOS 4.0 was introduced.
You now have the choice of Google, Yahoo and Bing.
If you want to select your default then do the following:
Tap Settings > Safari > Search Engine and select your favorite.
